1. 4. Prepare the masala: In a large pot, sauté the onions until golden brown. Add in the tomatoes, the rest of the ginger-garlic paste, and the remaining spices. Cook until the tomatoes are soft.

5. Cook the meat: Add the marinated meat to the pot and cook on medium heat until the meat is tender and fully cooked.

6. Layer the biryani: In a large pot, layer the partially cooked rice and the cooked meat masala. Add a layer of rice, then a layer of meat, and repeat until all ingredients are used up.

7. Final cook: Sprinkle the saffron-infused milk, fried onions, mint, and coriander leaves on top. Cover the pot with a tight lid and cook on low heat for about 20-30 minutes. This step is known as "dum" and allows the flavors to meld together.

8. Serve: Serve your South Indian style biryani hot with raita or a boiled egg.
